Wonton Soup in Marathi
Time: Preparation - 35 minutes | Cooking time - 10 minutes
Servings: 4 to 5
Ingredients:
::::Stuffing::::
1 medium carrot
1 medium bell pepper
3/4 cup cabbage, thinly sliced
5-6 french beans
3 mushroom
1/4 cup tofu, very small cubes
2 stalks spring onions
2 green chilies
1 tbsp garlic, finely chopped
2 tsp ginger, finely chopped
2 tsp soy sauce
1 tbsp oil
salt to taste
::::Cover::::
1 cup maida
1/2 tsp salt
::::For soup::::
5 cups vegetable stock
Salt to taste
2-3 garlic pods and 1/4 tsp ginger crushed
1/2 tsp vinegar
Method:
1) For the stuffing, chop all the vegetables finely. Heat oil into a wok. Saute ginger-garlic and spring onion. Then add all the chopped vegetables and saute over high heat for a minute. Add soy sauce and salt. Stir for few seconds and transfer it to another bowl.
2) Mix maida, salt and water. Make a semi-stiff dough. Divide the dough into marble size balls. Use corn flour or arrowroot powder for dusting. Roll into thin circles.
3) Place 2 tsp stuffing in the center. Apply slight water around the half of the edge. Fold and make half moon shape dumpling. Seal the edges. join the two ends at the back. Likewise make all the wontons. (see the picture).
4) Add little salt and crushed ginger-garlic to vegetable stock. Put it on the flame. When it starts boiling, add wontons and let it boil for 5 minutes. (Do not stir or disturb the wontons as they are very delicate and their cover may crack).
5) Wontons will cook within 5 to 7 minutes. Once they are cooked, they will float on the surface. Add vinegar and stir. While serving, add 3-4 wontons in each serving bowl and ladle the soup. Garnish with green onion and serve immediately.
Tips:
1) Vegetables should be finely chopped. Also, do not grate the vegetables. If vegetables are not finely chopped, then the cover may tear while making wontons.
2) Steamed chicken or crab pieces may be added in the stuffing.
3) While making wontons do not let the cover tear. Because all the stuffing will come out when you boil the soup.

DeleteI don't have ready vegetable stock for soup, so what alternative can i use for soup

DeleteBut to get the vegetable flavour, boil water along with vegetable peels and few scrapes of vegetables. This way the aroma get infused in the water.
