Coffee Cake in Marathi
Time: 60 to 70 minutes
Makes: 10 to 12 servings
Ingredients:
for topping::
1/4 cup light brown sugar, firmly packed
1 tsp cinnamon powder
3/4 cups walnuts
for the cake::
1 cup thick sour cream
1 tsp baking soda
1 + 3/4 cup all purpose flour
1.5 tsp baking powder
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 tsp slat
2 large eggs
2 tsp vanilla extract
Method:
Preheat the oven at 350 F. for 10 minutes
1) Topping: Toast walnuts in preheated oven for 8 to 10 minutes. Once walnuts are toasty, take them out of the oven. Chop them with a sharp knife or give a couple of pulses in the blender as we want them coarse. Add cinnamon powder, brown sugar and chopped walnuts into a bowl. Keep it aside till we make the cake batter.
2) Take a bowl. Add sour cream and baking soda. Mix well.
3) In another bowl, sift the flour and baking powder together.
4) In a big mixing bowl beat the butter, sugar and salt together until light and fluffy, (for 2-4 minutes). Add one egg at a time, blend it well and then add another. Also add vanila extract and mix.
5) Add dry ingredients in three batches alternatively with sour cream.
6) Take 2 baking pans (8x8x2). Grease them well with butter. Butter the edges too. Divide the mixture into two equal portions and pour it into pans. Sprinkle the topping generously. Bake for around 30 to 35 minutes. (after 30 minutes, just check the doneness by piercing a knitting needle or a skewer deeply in the center. If skewer comes out clean, then the cake is done. Otherwise bake for few more minutes.)
7) Let the cake cool down on wired rack. Gently remove it from the cake tin. Cut and serve.
This cake is usually served with coffee or tea.
Tip:
1) Same quantity of thick sour yogurt can be substituted for sour cream.
