Tawa pulav in Marathi

Serve this spicy Tawa Pulao with Flavorsome Raita



Ingredients:
::::Rice::::
1 tsp + 1 tsp Butter
¾ cp Basmati Rice
1½ to 1¾ cup water
1 tsp salt
::::Masala::::
Carrots: 1/8 cup thinly sliced (1” pieces)
Bell Pepper: ¼ cup thinly sliced (1” pieces)
Cauliflower: ¼ cup, half cooked
Onion: ¼ cup finely chopped and 1/8 cup thinly sliced
Tomato: ½ cup finely chopped
Boiled and peeled Potato: 1/8 cup, 1/2 inch cubes
Steamed Green Peas: ¼ cup
1½ tsp Garlic Paste
½ tsp Cumin seeds
1½ tsp Red Chili Powder
2 tsp Butter
1 tsp Pavbhaji masala
Whole Masala : 1 small Cinnamon stick, 2 Cloves, 1 Bay leaf, 1 Cardamom
Cilantro for Garnishing

Method:
1) Wash Basmati Rice and drain water completely. Keep aside for 10 minutes. Then heat a nonstick pan (take a deep saucepan). Add 1 tsp butter and let it melt. Then add washed rice and stir for 2-3 minutes. Then add 1½ to 1¾ cup water. Add salt to taste. Turn the heat to medium low and let the rice cook uncovered. Stir occasionally. Once rice is done, transfer cooked rice to a bigger plate to cool down. Spread rice on the plate; let it cool down a little. The drizzle 1 tsp butter over it and gently spread it to all over the rice. Butter will help to make the rice grains separate from each other and it gives nice glaze to the rice. Do it very carefully, harsh handling could mash the rice grains and you will not get the desired texture of rice.
2) Then heat a nonstick Tawa over medium heat. Add 2 tsp butter; let it melt down. Then add Cumin seeds, Garlic Paste and red Chili Powder. Sauté for approximately 20-30 seconds.
3) Add Onion and sauté. Once Onion is done, add Bell Pepper and Carrots. Sauté for 2-3 minutes. Do not overcook.
4) Add Cauliflower, Tomato. Stir well and let it cook for 1-2 minutes. Add Green Peas, Potato and Pavbhaji Masala. Add salt to taste. Do not mash these vegetables as we do while making Pavbhaji. Because, we are going to make Pulao by using these vegetables.
5) Once this Masala Bhaji is done, place it to one side of tawa. Add ½ tsp butter on the empty space of Tawa, add Whole Masala to it. Saute for 10-15 seconds and mix it with the Tawa Bhaji. Then sauté for a minute. If we add whole Masala in the starting (with Cumin seeds), we would get overwhelming flavor of this Masala. To avoid it, we will add it at the end.
6) Heat this Tawa Bhaji over high heat. Add rice. Divide rice into 4 parts. Add one part at a time. Mix well and then add another one. It will help to spread Tawa Bhaji to entire rice. Stir well. Garnish with chopped Cilantro and serve hot with Raita.

    thanks for your lovely comment... Large skillet is better... if you dont have one.. use nonstick pan or wok..but in the last step keep the heat on High. :) .. it brings nice flavor to the rice

    Cut onion and sliced onion gives 2 different textures to Tawa Pulav..Finely chopped onion gives nice taste. and onion slices make the pulav attractive and palatable. and yes, I have added both (sliced and cut onion) together.
    You can add either finely chopped or sliced onion to your pulav..
