Mango Puri in Marathi
Time: 45 minutes
Makes: 40 medium puris
Ingredients:
1 cup Maida
1/2 cup Rava (fine) (Do not use superfine or coarse)
1.5 tbsp Hot ghee
Pinch of salt
Haapus Mango (1 or 2)
For sugar syrup
1 cup sugar
3/4 cup water
Few strands of saffron
Cardamom powder
sufficient Oil or ghee to fry puris
Method:
1) Squeeze out mango pulp. Strain it through fine mesh. This way we will get smooth mango pulp without any lumps and thready texture.
2) Mix maida rava and pinch of salt into a mixing bowl. Heat ghee and pour it on rava maida mixture. Add mango pulp just enough to make stiff dough. Let the dough rest for half an hour. After that divide the dough into small portions to make puri.
3) Mix sugar and water into a pan. Boil till you get two thread consistency syrup. Add saffron and cardamom powder.
4) Heat oil/ ghee over medium heat. Roll few puris while oil is heating. Roll the puris and deep fry over medium heat. Place fried puris on tissue paper. Then after few seconds put them into sugar syrup. Drizzle sugar syrup all over puris. Make sure all the puris are well coated with sugar syrup. Keep them into sugar syrup for couple of minute. Then arrange them separately onto a plate. Fry all puris likewise.
Tip:
1) There are four things you have to handle together. Rolling, frying and dipping puris into sugar syrup. Another work is to arrange them separately. You may roll few puris just before frying. OR you may ask help from someone.

DeleteThese puris are usually eaten as a snack. Serve them with some pickle.
Khup chaan recipe ahe...very similar to Bhoplyache Gharge.
