Shrikhand in Marathi
Ingredients:
1 cup sour cream
1/2 cup sugar
Pinch of saffron
1 tbsp Lukewarm Milk
3 tbsp Yogurt
1/2 tsp Cardamom
Almond, Cashew nuts pieces for garnishing
Method:
1) Mix Saffron in Lukewarm milk. Mix Sour Cream and Sugar nicely until sugar dissolves. whisk Yogurt and add it to sour cream. For flavor, add Cardamom Powder. To give nice color, add Saffron mixture. mix nicely. Garnish with Almond and pistachio pieces. Refrigerate for 2 to 3 hours. Serve chilled.

Note:
1) Always keep shrikhand refrigerated. It melts at room temperature.

ReplyDeleteI am sorry, but this recipe is NOT shrikhand recipe. The product of this recipe may taste like shrikhand, but it is NOT shrikhand.
ReplyDeleteShrikhand recipe in brief - Make dahi (yogurt) from milk. Put dahi in a thin cotton cloth and tie the cloth (similar to what you have to do to make paneer) and let it be overnight (12-16 hours) so that liquid from dahi is completely drained out and you have what's traditionally called "chakka". To this add sugar, saffron and cardamom to your taste and mix it well by stirring and stirring and stirring for at least 20-25 minutes. you can also add little yellow food color. For maharashtrian style, add "charoli" if available but that's optional.

This recipe is for them who don't have time to make traditional shrikhand but want to make a quick recipe which taste very similar to shrikhand. Enjoy the recipe

ReplyDelete4 Cream line yogurt From trader joes or 4 Mountain high yogurt, 1 sour cream and 1 Greek yogurt. Hang everything including sour cream and Greek yogurt. The result is nice creamy shirkhand. Even if you want to make shrikhand from Sour cream. Please hang it for few hours. It will taste more good.

ReplyDeleteThanks Vaidehi, it turned out to be really great. I added a little more yogurt than the recipe recommended. I also let yogurt and sour cream drain by tying them separately in cotton cloths and letting them drip the water content out for about 1 hour. I made lechi with it.
