वाढणी : साधारण एक किलो
साहित्य:
दिड कप चणाडाळ
१/२ कप उडीदडाळ
१/२ कप मूगडाळ
२ कप तांदूळ
१/४ कप साबुदाणा
५० ग्राम जिरे (साधारण १/४ कप)
मूठभर धणे
कृती:
१) सर्व डाळी वेगवेगळया धुवून घ्याव्यात. वेगवेगळया सुती कपड्यावर सावलीत वाळत घालाव्यात.
२) तांदूळ स्वच्छ धुवून सावलीत वाळवून घ्यावेत.
३) सर्व डाळी ब्राऊनिश रंग येईस्तोवर वेगवेगळ्या भाजून घ्याव्यात. तांदूळ आणि साबुदाणे वेगवेगळे भाजून घ्यावेत.जिरे धणे भाजून घ्यावेत.
४) सर्व डाळी, तांदूळ, साबुदाणे व इतर जिन्नस एकत्र करून थंड होवू द्यावे. थंड झाले कि बारीक दळून आणावे.
टीपा:
१) चकली भाजणीसाठी बिनसालाची उडीद आणि मुगडाळ वापरावी. सालासकट वापरल्यास चकल्या रंगाने काळ्या होतात आणि भाजणीचा स्वादसुद्धा चांगला लागत नाही.
२) सर्व डाळींवरील पावडर काढण्यासाठी ती न धुता ओल्या पंच्याला वेगवेगळ्या पुसून घ्याव्यात. यामुळे डाळी वाळवण्याचा वेळ वाचतो. तसेच डाळी भाजताना वेळ कमी लागतो.

This is the first time I tried it....Chakali tar khup chan zali paN kahi ghyaNya madhe tya sutat hotya, mag mi kadhun thevalelya bhajaNichi ukad mix keli (mohan n ghalata)....thoda pharak tar padala...but thoda trass hi zala..not sure what happened... chakalya chavila chan, khukhshit zalya paN thodya telkat waTatayet..thanks for the receipe..it really helped.

Tu ukad kadhlis tevha pani ukalalyavar pith ghalun lagech band kele hotes ka? karan modakachya ukadisarkhi hi ukad shijavaychi nahiye. jast shijali tarisuddha chakalya tel piu shaktat.

WHY DO WE WASH RICE AND NOT DALS?

ReplyDeleteYou can wash dals as well. But I use the above method. The reason is it saves time of drying dals. Also it takes little longer while roasting if the dals are washed.
If you want to wash dals, wash them separately and dry them on separate cotton cloth. Do not dry them under sun-light.
IS IT OKAY IF WE DO NOT WASH RICE?

DeleteIt depends on what you are measuring.
If you are measuring raw dal and rice for above recipe
Then
1.5 cups = approx 300 grams
1/2 cup = approx 100 grams
and 2 cups = 400 grams

DeleteIn your above recipe added roasted wheat. No sooner the chakalis are in oil it started breaking.I tried to fix by adding little bit of wheat flour but in vain. Pl suggest any tips.

Me besan ani tandulacha peeth bhajun, thanda kela. Urad dal, moong dal, pohe, dhane jeere bhajun thand karun mixie madhe vatle. Varchya recipe pramane mapa powder form madhe gheun chaklya kelya & they just turned out to b yummmm. My 4 year old is feasting on them. US madhlya bhagininni try karava mixie madhe, use the recipe proportions in powders & ur chaklis will b nearly 90% similar to bhajani chakli. Once again thank U Vaidehi :) :D
