साधारण दिड कप मैदा
कृती:
१) दूध आणि साखर एकत्र करून साखर वितळेपर्यंत गॅसवर गरम करावे. (महत्त्वाची टिप खाली नक्की वाचा) हे मिश्रण कोमट करून घ्यावे.
२) या मिश्रणात तूप गरम करून त्याचे मोहन मैद्यामध्ये घालावे. मिक्स करून कोमट दुध घालून मैदा भिजवावा. भिजवलेला मैदा एकदम घट्ट किंवा एकदम सैल मळू नये. मध्यमसर मळावे. मळलेले पिठ २० मिनीटे झाकून ठेवावे.
३) २० मिनीटांनंतर पिठ परत एकदा मळून घ्यावे. २ इंचाचा एक गोळा करून थोडा मैदा भुरभुरवून लाटावे. कातणाने त्याचे शंकरपाळे पाडावेत. आणि तूपात किंवा तेलात सोनेरी रंगावर तळून काढावेत.
टीपा:
१) दुध आणि तूप एकत्र केल्यास काहीवेळा फाटते. म्हणून साखर आणि दुध गरम करून कोमट करावे. तूप निराळे गरम करून त्याचे मोहन मैद्यामध्ये घालावे.
२) अमेरिकेत दुध, तूप आणि साखर एकत्र उकळवून मी शंकरपाळे केले होते तेव्हा कधी दुध फाटले नव्हते. बहुदा ते प्रोसेस्ड असल्यामुळे असेल. पण भारतात दुध अन्प्रोसेस्ड असल्यास दुध आणि तूप एकत्र गरम केल्यावर ते काहीवेळा फाटू शकते.
२) दुधाऐवजी पाणी वापरले तरी चालेल. पाणी वापरल्यास पाणी, तूप आणि साखर एकत्र करून गरम करावे. साखर वितळली कि मिश्रण कोमट होवू द्यावे आणि मग मैद्यात घालून भिजवावे.

मोहन जास्त झाले कि शंकरपाळे तेलात टाकल्यावर विरघळतात. तांदळाच्या पिठापेक्षा गव्हाचे पिठ वापर. आधी मळलेल्या पिठातला एक लहान पोळी होईल इतका गोळा वेगळा काढ त्यात गव्हाची कणिक वापरून पाहा आणि शंकरपाळे कर जर चांगले झाले तर (होतीलच बहुतेक) बाकिच्या पिठाचेही तसेच बनव शंकरपाळे. अधिक कणिक वापरत असल्याने थोडे दुध वापरलेस तरी चालेल.

I tried your receipe. But didn't worked for me! Not sure it's just me or?
ReplyDeleteFirst of all I thought the maida ratio with the liquid was too less, I took 1/4 cup each of milk, ghee and sugar and 11/2 cup maida, but the floor was too watery so I had to put more maida in it. I must have used at least 21/2 cup maida. And the ghee was too much so the shankarpale used to break while frying. Not sure if the ratio is correct! can you please confirm!

And last week i tried out ur chhole for my mother in law and brother in law and it came out awsome. thanx a lot they praised me :) :).
While doing i was in tension bcz i was doing it first time and ur recipe is for two persons and we are five. i was not getting what to do? shall i double the ingredients but i didn't. i just took some more but it was compusory to double chhole. but MAIN it came out yummy..thanx again.
and please tell me what to do in such situation. shall i double or???

Yes you need to double the amount of Chole..Also, the quantity depends on how much you consider in one serving..because every person has different appetite.

i fully agree. the recepie is perfect and flawless. in fact the milk may curdle because of some acidic content in sugar or because of 'lonkadhe tup' which is sometimes sour in taste. but the method and proportion is perfect.
