Crispy Fried Tofu Curry in Marathi
Time: 20 to 25 minutes
Servings: 3
Ingredients:
1 cup Basmati Rice
400 gram Tofu, medium squares
4 tbsp corn flour
1/2 tsp salt
::::For curry::::
2 tsp soy sauce
1 tsp vinegar
1.5 tbsp chopped garlic
1 tbsp chopped ginger
1 medium onion, sliced lengthwise
2 tbsp corn flour
2 cups water
2 red chilies, finely chopped
2 tsp brown sugar
Sal to taste
4 to 6 tbsp oil
2 strings of spring onion
Method:
1) Cook rice in 2 cups of water. Rice should be well cooked and fluffy.
2) Wrap tofu in a paper towel. Press gently to remove excessive water. Mix corn flour and salt together.
3) Let the corn flour stick well over tofu for 5 minutes. Then again toss it in corn flour. Heat oil and shallow fry tofu. Make the tofu slightly red in color. Remove and place it on paper towel.
4) In the remaining oil, add garlic, ginger, chili, and onion. Add soy sauce. Mix corn flour, brown sugar and water together. Add this mixture to the pan. If you want curry more thick then mix 1 tsp corn flour in 2 tsp water. Add it to the curry and stir well. Add vinegar and salt to taste.
5) Once curry thickens, add tofu and coat them nicely with the curry.
Serve rice into serving plate and pour the tofu curry on top. Garnish with green onion. Serve hot.
