Chickpea and Pasta Soup in Marathi
Time: 10-15 minutes
Serves: 2 persons
Ingredients:
3/4 cup cooked Chickpeas (Garbanzo Beans )
1/4 cup dried pasta (preferably small)
1 medium tomato, pureed
1 medium carrot, small chunks
1 tbsp olive oil
4-5 big garlic cloves, chopped
1 tsp red chili flakes or to taste
1 tsp spice blend of dried basil, dried oregano and dried thyme
1 and 1/2 cups water
Salt to taste
Method:
1) Heat olive oil into a pan. Add chopped garlic and saute over medium heat.
2) Then add carrot and cook for a minute. Add tomato puree and saute over high heat for 1 minute. Now add water, cooked chickpeas and dried pasta.
3) Boil till pasta gets cooked. Add chili flakes, spince blend and little salt.
Serve hot.
Tips:
1) Chickepeas should be cooked completely.
2) Serve immediately once pasta is done. If you want to make the soup ahead of time, then make the soup without pasta. Just 10 minutes before serving the soup cook pasta seperately, add it to the soup and boil for a minute or two. Serve.
3) You may add half a tsp of lemon juice for tangy taste.
4) Amount of oil can be reduced
