Chakali recipe in Marathi

Time: 35 minutes
Yield: 20 to 22 medium sized Chakali

Ingredients:
1 cup Chakali Bhajani (Chakali Flour)
1 cup water
1 tsp Asafoetida Powder
2 tsp Sesame seeds
½ tsp Carom Seeds (Ajwain)
1 tbsp Red Chili Powder
1 tsp Oil
Salt to taste
Oil for deep frying

Method:
1) In a deep and medium saucepan, heat 1cup water. Add Asafoetida Powder, Sesame seeds, Carom Seeds, Red Chili Powder, Oil and salt. Give a nice stir. Bring the water to boil.
2) Once water starts boiling, add Chakali Bhajani and mix vigorously. Turn of the heat and cover saucepan with lid for 7-8 minutes.
3) After 10 minutes, transfer the Bhajani dough to plain surface or in the plate. Use little lukewarm water to knead the dough. Make a soft dough.
4) Grease Chakali Press utensil from inside with little oil. Stuff enough dough in it. Press and move into circular motion to make Chakali.
5) Deep fry Chakali on medium high heat, until golden. Drain and put on paper towel to remove excessive oil.
Keep Chakali in Airtight Container after cooling.

My Maharashtrian neighbour makes this wonderful chaklis and everytime she cooks this i am amazed at the efforts they put in,coz the dough is so thick and it really drains me out when i help her squeeze the dough thru chakli making utensil,and mine circles never come out tightly rolled....maybe i need some more practise..and yeah frying them on medium flame takes almost half day(coz she makes of 1 kg flour)..but the efforts are worth putting in,coz at the end we just can't stop munching on these crispy devils......

  8. We had to add lots of extra Butter than specified to stop it from dissolving in the oil. Otherwise, rest of the recipe is perfect.

    You have to ask at your nearer Indian store. You can prepare Chakali flour at home if you have a mixi with good power..You won't get fine powder if you don't have good grinder mixer..

  11. The picture is soo absolutely tempting!! my mom cn never make them really well. i mean they're good but not awesome,there aways seems to be something missing!!

  14. Vaidehi, thanks for sharing ur recipe. Do you know if there's anything close to a chakali press that can used here in the US, was not available to find one in my local indian store. Have tried big icing nozzles, but the dough is just too think.

    It is difficult to make chakali without chakali press.
    If it is okay, you may borrow Chakali press from your friend. :)

      From past two years i am making chakali following your recipe for Diwali. I have one issue they break in oil then i have to add dry bhajani to the kneaded dough till they stop breaking. The chakalis turn around very nice and every one appreciate them. But if you can suggest some thing so that they dont break in oil. Thanks a lot for your efforts in putting such nice recipes.

    I followed your recipe to the dot, yet my chakali has gone soft after a few hrs and few dissolved in the oil, I have been going thru the recipe over and over to understand wht I missed, but all I cud think is may be the flame of more towards high than medium. Any tips for redemption :(

    Yes, the temperature of oil has to be perfect. If its high, then chakali wll look all done from outside. But inside its uncooked, ultimately they will turn soft. If you fry them on low heat. it will become oily and bit hard. Also, if the 'mohan' added (oil added in the flour) is insufficient can cause soft chakalis.
