१० मध्यम पोळ्या
वेळ: २५ मिनिटे (पुरण आणि भिजवलेले पीठ तयार असल्यास)


साहित्य:
१ कप चणाडाळ
१ कप किसलेला गूळ
एक कप मैदा
१/२ कप गव्हाचे पिठ
७ ते ८ टेस्पून तेल
१ टिस्पून वेलचीपूड
कोरडे तांदुळाचे पीठ

कृती:
१) चणाडाळ कूकरमध्ये चणाडाळीच्या अडीचपट पाणी घालून शिजवून घ्यावे. डाळ शिजली कि त्यातील पाणी निथळू द्यावे. हे पाणी वापरून कटाची आमटी करता येते.
२) डाळीतील पाणी निघून गेल्यावर हि डाळ पातेल्यात घ्यावे. त्यात किसलेला गूळ घालावा. मध्यम आचेवर हे मिश्रण आटवावे. आटवताना ढवळत राहावे. जर ढवळायचे थांबवले मिश्रण पातेल्याला लागून करपू शकते. या पुरणात १ चमचा वेलचीपूड घालावी.
३) मिश्रण घट्टसर झाले कि पातेले गॅसवरून उतरवावे. मिश्रण पुरणयंत्रातून फिरवून घ्यावे.
४) मैदा आणि कणिक मिक्स करून त्यात ५-६ चमचे तेल घालावे. आणि सैलसर मळून घ्यावे. भिजवलेले पिठ २ तास मुरू द्यावे.
५) पुरणाचे दिड इंचाचे गोळे बनवून घ्यावे. मैद्याचा अर्धा ते एक इंचाचा गोळा घ्यावा व त्याची पातळसर पारी बनवून घ्यावी. त्यात पुरणाचा गोळा भरावा. सर्व बाजूंनी बंद करून घ्यावा.
६) पोळपाटावर थोडी तांदुळाची पिठी घेउन हलक्या हाताने पोळी लाटून घ्यावी. तव्यावर खरपूस भाजून घ्यावी.
साजूक तूप घालून गरम गरम सर्व्ह करावी. या पोळ्या टिकाऊ असतात. आठ एक दिवस सहज टिकतात. थंड पोळ्या दूधाबरोबर छान लागतात.

टीप:
१) वेलचीऐवजी  जायफळपूड वापरू शकतो. त्याचा स्वादही चांगला येतो.

  12. This is a great recipe! Just a little tip. Try to blend the cooked channa dal before adding the sugar. Then you can cook it on the stove with the added sugar. This way even if you don't have a "Puran Yantra" to mash it. this will come out fine like chandan. Try it.

    चणा डाळ शिजवल्यावर त्यातील पाणी निथळू द्यावे. आणि पुरण शिजवताना त्यात पाणी घालायचे नाही. फक्त शिजलेली डाळ आणि गूळ घालायचा.
    निथळलेल्या पाण्याची कटाची आमटी बनवावी.

    mugdalichi puranpoli karta yete. 1 vatee mugdal ghetli tar 3/4 vatee (kinva 1 vatila thoda kami) gool ghyaycha. Mugdal bhijat ghalaychi tasbhar. nantar tyatil pani kadhun nehmisarkhi shijavun ghyavee. nantat nehmichya purnpolila karto tashich paddhat follow kar.

    I want to request recipes for food items that will stay fine outside without refrigeration.
    My son loves camping and so far I have packed Puran Polis for him. But after 2-3 times eating it, it gets kind of boring for him. So, I would like to know if there are other dishes that I can make (preferably tikhat like khakra)

    Chana dal cooker madhe lavun ghyavi. Ani nantar ti mixer madhe barik vatun ghyavi. Mixer madhe barik karatana thode pani ghatale tari chalate. Pan ti vyavastith barik vatali geli pahije... nantar medium flame var vataleli chana dal ani gul ghalun dhavalat rahayache... jo paryant puranacha ek akkha gola hota nahi to paryant.... jevha ek akkha gola hoto tevha puran vyavastith asate...

  79. पुरण खूप कोरडे किंवा ओलसर नसावे
    पुरणामध्ये अक्खी डाळ राहता काम नये.. पुरण एकसंध असावे.
    मैदा एकदम सैल भिजवावा म्हणजे पोळी लाटताना आतील पुरण मैद्याबरोबर सर्वत्र पसरते.
    मैद्याची लाटी खूप मोठी घेऊ नये. शक्य तितकी लहान लाटी घ्यावी म्हणजे पोळ्या जाड होत नाहीत.
