Dhapate in Marathi
Time: 20 minutes
Yield: 5 medium dhapate
Ingredients:
1/2 cup Pulp of Roasted eggplant
Jowar flour + Wheat flour + Besan (1 : 1/2 : 1/4)
1 tsp Green chili paste OR to taste (you may add red chili powder)
2 tsp garlic paste
1/4 cup chopped cilantro
1/4 tsp turmeric powder, 1/2 tsp carom seeds, 1/4 tsp cumin seeds
1 tsp goda masala OR garam masala
Salt to taste
Oil as required
Method:
1) Add chili paste, garlic paste, cilantro, turmeric powder, carom seeds, cumin seed, garam masala and salt to roasted eggplant. Add 2 tbsp oil. Mix well.
2) Add flours to get stiff dough. (The proportion is 1:1/2:1/4 i.e. 1 portion of jowar flour 1/2 portion of wheat flour and 1/4 portion of besan) You may vary the proportion but the jowar flour should be more than the other two flours. (Do not add too much besan, dhapate will become dry and hard)
3) Add oil and knead well. Divide into medium balls.
4) Roll them slightly thicker and roast. Drizzle some oil while roasting. Serve hot with Homemade butter.
Tips:
1) Traditionally, eggplant is not added to the recipe. It is a variation. You may use yogurt to make a dough instead of water. This will give little tangy taste to dhapate.
2) You can make own variations. add some chopped onion, sesame seeds etc.

डब्यासाठी योग्य पाककृती! धपाटे ट्रेडिशनली वांगं वगैरे घालून करीत नाहीत. फक्त ओवा, जिरे, तीळ, तिखट , मीठ, हळद, मिक्स पिठं , थोडे मोहन व कोथिंबीर! म्हणजे टिकायला बरे! सोबत लसणीचे तिखट, लोणचे, तिळाची चटणी किंवा लोणी.... रेल्वे प्रवासाचा मस्त बेत!
