Dates Pickle in Marathi
Time: 5 to 10 minutes
1.25 cups approx
Ingredients:
1 cup chopped Dates
1/2 cup jaggery grated
1 tbsp lemon juice
1 tsp thin slices of ginger
3-4 green chilies, finely chopped (OR you may use red chili powder approx 1.5 to 2 tsp)
Salt to taste (approx 1/2 to 1 tsp)
Method:
1) Take jaggery into a medium pan. Add 2 tbsp water. Put on a low flame. Keep mixing, otherwise jaggery will burn.
2) When jaggery melts completely. Turn off the heat. Let the jaggery cool down a bit.
3) Add ginger slices, chopped chili, lemon juice and salt to melted jaggery. Then add chopped dates and mix.
This pickle can be served immediately.
Tip:
1) The ingredients used to make this pickle has to be fresh and not refrigerated ones. If you use refrigerated green chili, ginger or lemon, then the pickle will perish in a few days.
