Spicy Suran Slices in Marathi
Time: 25-30 minutes
Serves: 5 to 6 persons
Ingredients:
400 gram Suran (Elephant foot yam)
::::Rub Mix:::
2 tbsp lemon juice
1 tsp turmeric powder
2 tsp red chili powder
1 tsp Salt
::::Semolina mixture::::
3/4 to 1 cup fine semolina
1 tsp cumin powder
1 tsp red chili powder
Salt to taste
Other ingredient
oil for deep frying
Method:
1) Apply kokum before handling suran. OR use hand gloves. Peel and make big chunks of suran. Take a big bowl half-filled with water. Add few pieces of kokum and crush them. Immerse suran pieces in kokum water. Leave them in water for couple of hours.
2) Mix all the items given under label 'rub' (lemon juice, turmeric powder, red chili powder and salt). Make thin slices of suran. Dry them with towel. Apply the rub on each slice. Place them separately into a big plate.
3) Mix semolina, cumin powder, red chili powder and salt together. Put each suran piece in this mixture and coat it well with semolina mixture. Do the same with the rest of the pieces. Let them rest for atleast 30 minutes. (At this stage you may refrigerate them upto 3 days for later use)
4) Spray little water on suran pieces. Press gently to make sure semolina won't fall off in the oil while frying.
5) Heat the oil and deep fry suran pieces over medium heat.
Serve hot. It can be eaten as a side dish alongwith Dal-Rice.
Tips:
1) Suran pieces can be shallow fried. However suran takes longer to cook. So it is better to deep fry.
