Gulamba in Marathi
Time: 15-20 minutes
1.25 cups Gulamba
Ingredients:
1 cup grated green mango (peel 2 medium green mango and grate using big hole grater)
2 cup jaggery, chopped
1/2 tsp cardamom powder
6-7 cloves
1 tsp ghee
Method:
1) Take a kadai. Heat ghee. Add grated mango. Saute and cover for 2-3 minutes over low heat.
2) Then add jaggery and mix. Stir till the jaggery melts. Add cloves. Simmer over low heat for few minutes.
3) The syrup should be of one string or strings consistency, not more that that. Don't boil too much, syrup thickens a bit after cooling down.
4) Once your reach the desired consistency, turn off the heat and mix in the cardamom powder. Keep it uncovered till gulamba cools down.
Once cooled, transfer it to a clean jar with an airtight lid. Refrigerate.
Tip:
1) If you are making gulamba in a large quantity, use 1:2 proportion of grated Mango and jaggery. (i.e. for 1 portion of grated mango use 2 portions of Jaggery
