Garam masala in Marathi
Time: 20 minutes
150 gram Masala
Ingredients:
50 gram coriander seeds
50 gram cumin seeds2 tsp shah jira (5 gram)
1 tsp cloves (20-25 cloves) (5 grams)
2 sticks cinnamon (1 inch each) (5 gram)
1/2 Nutmeg, grated
4-5 Star anise (5 gram)
2 inch bud of Jaypatri (5 gram) (Mace)
2 inch bud of Maypatri (5 gram)
6 Masala Ilaychi (badi ilaychi) (5 gram)
8-10 green cardamom (5 gram)
1.5 tsp black pepper corns (5 gram)
2 inch piece of Sunth (dried ginger) (10 gram)
5-6 bay leaves
Method:
1) Dry roast each ingredient till warm. (warming the spices helps to bring out flavors.)
2) Grind in the mixer. Sift through a fine mesh. Grind the coarse remnant of spice mixture again.
When garam masala mixture is completely cool, transfer it to an airtight jar.

What is maypatri?
ReplyDeleteJaipatri means fibrous skin of Jaifal (nutmeg). There is a similar spice called Maifal. The skin around maifal is called maipatri. You will find it easily in Grocery store.
