Time: 25 to 30 minutes
Ingredients:
2 cups small pieces of Ripe Alfonso Mango (tip 1)
4 cups Sugar
5 to 6 Cloves
Method:
1) Take a medium sized nonstick pan. Add mango pieces and sugar into it.
2) Cook mango pieces and sugar together over medium heat. Sugar will melt in a few minutes. Cook until sugar syrup becomes thick just like honey. Do not make the syrup too thick, as it will thicken little bit after cooling down.
Tips:
1) Use just ripe mangoes. Do not use over-ripe mangoes as it will melt while cooking.
2) Peel the mangoes and cut into 2 cm pieces. Also remove the pit.
3) You may add cardamom instead of cloves.
4) It is okay to keep the consistency little thin than required. However, in that case refrigeration is a must.
