वेळ: मिश्रण भिजवायला १ तास + आप्पे बनवायला ३० मिनीटे
साधारण १५ ते १८ आप्पे
साहित्य:
३/४ कप जाड रवा
३/४ ते १ कप आंबट ताक
चवीपुरते मिठ
१/२ टिस्पून जिरे, ठेचलेले
३ हिरव्या मिरच्या, बारीक चिरून
५-६ कढीपत्ता पाने, बारीक चिरून
१/४ कप कांदा, बारीक चिरून
१/२ टिस्पून आलेपेस्ट
२ चिमटी बेकिंग सोडा (खायचा सोडा)
१/४ कप तेल
कृती:
१) रवा आणि ताक तासभर भिजवून ठेवावे. नंतर त्यात जिरे, मिरच्या, कढीपत्ता, आलेपेस्ट, कांदा चवीपुरते मिठ घालून मिक्स करावे.
२) आप्पेपात्र गॅसवर गरम करत ठेवावे. मिश्रणात २ चिमूटभर सोडा घालावा आणि मिक्स करावे. अप्पेपात्रातील प्रत्येक अर्धगोलात तेल लावून त्यात भिजवलेले पिठ घालावे. वरून झाकण ठेवून मिडीयम गॅसवर ४ ते ५ मिनीटे एक बाजू खरपूस भाजून घ्यावी. काट्याने (फोर्क) पलटून दुसरी बाजू थोडे तेल घालून खरपूस करून घ्यावी.
नारळाच्या चटणीबरोबर गरमच सर्व्ह करावे. आप्पे थंड चांगले लागत नाही.

ReplyDeleteyou can use idli batter to make the above recipe..just add cumin, ginger paste, green chili, curry leaves. Skip baking soda and buttermilk as the batter is already fermented.
You can make sweet Appe..
Use idli rava soak it for few hours. don't add too much water we want thick consistency batter.
Add fresh coconut, jaggery, little cardamom to taste. Rest it for couple of hours. Mix nicely.Add baking powder and make appe. As its a sweet, use ghee for greasing the appe pan.
u can also search appe patra in mexican stores. Not sure what they call it here in US.

ReplyDeleteHi, me he try kele, pan somehow they were sticking to the appe patra(non stick wala hota tari pan)...I did not have baking soda, hence used same amount of fruit salt(eno)...although the taste was good, they were not presentable at all. Fruit salt mule gadbad zhali asel bahutek :(

ReplyDeleteHow much batter to use per the half circle? I first filled the circle half way. When I flipped the appe to roast the other side, they came out yellow, not golden brown.
ReplyDeleteWhen I filled the half circle almost completely, still the other half was not browned, only pale brown. Should I fill the circle all the way, allowing a little bump on the top? But then the middle may not be cooked.
Should I put a cover while cooking? How many minutes to cook each side?

How full should the mould be with the batter? I tried both: half and full, but when I flipped the appe, the other side did not become brown, as it did not touch the bottom of the mold. Problem: top of the appe after first flip were too wide to fit in the mould.

ReplyDeleteFill the moulds completely (i.e. upto the level of semi circle) Due to baking soda they will rise a little after steaming. When you flip the appe, press them gently. It will help to touch the other side to the bottom.

Problem ha zala ki jawal paas paun taas paanyat thevun pan vadyani dahi mhanave tase absorb kele nahi. Ase ka zaale asave? Appe patra vajanala light ani patkan garam honare.
