Malbar Cashew coconut Stew in Marathi
Time: 25 to 30 minutes
Serves: 1
Ingredients:
1 cup coconut milk
1 small carrot, medium cubes
3-4 french beans, medium peices
1 small potato, peeled and medium cubes
70 gram Paneer, medium cubes
80 gram red pumpkin, cubes
Malabar Spice blend:
1 tsp pepper corn
1 tsp cloves
1/2 star anise
4-5 cardamom
2 tbsp fennel seeds
2 pinches mace
2 pinches nutmeg powder
1 stick cinnamon
Other ingredients:
1 tbsp butter
1 tsp ginger garlic paste
2 to 3 tbsp onion, finely chopped
1 tbsp cashew paste
Salt to taste
fried cashews for garnishing
Method:
1) Dry roast all the ingredients given under spice blend. Then grind to fine powder.
2) Heat butter into a pan. Add ginger garlic paste and onion. Saute for a minute. Then add potato cubes, carrot and french beans. Saute.
3) Add coconut milk and little water. Bring it to boil. Add cashew paste.
4) Add pumpkin, paneer, 1 spoon spice blend and simmer for 5 to 8 minutes. Add salt. Garnish with cashews.
5) Serve into a stew plate along with roasted bread slice and boiled rice.
