Coconut Rice in Marathi
Time: 15-20 minutes
Servings: 2
Ingredients:
1/2 cup Rice
1/2 cup scraped coconut (you may add more)
2 tbsp oil
1/4 cup peanuts
2 tsp urad dal
1 tbsp chana dal
1/4 tsp mustard seeds
1/4 tsp hing
1 sprig Curry leaves
3-4 red chilies, broken
1/2 tsp grated ginger
Salt to taste
Method:
1) Cook Rice. (add salt while cooking.) Make it fluffy and grains should remain saperate. Remove them on a plate to cool down. Once it become luke warm, add scraped coconut and mix.
2) Heat oil into a tadka pan. Keep the flame on medium. First add the peanuts. Stir gently. Once peanuts become light brown, remove and put them onto cooked rice.
3) Add chana dal into oil and stir. Let it become pinkish in color. Remove and place onto cooked rice. Likewise do with the urad dal.
4) Then in the remaining oil, add mustard seeds, hing, curry leaves, grated ginger and red chilies Pour this tadka over rice.
5) Mix nicely. You may microwave the rice after mixing or add it to a thick bottomed pan. Cover the pan and cook the rice over low flame for 3-4 minutes.
Serve hot with any spicy curry or Tomato Garlic Chutney.
