Sweet Corn Basundi in Marathi
Time: 30 minutes
Makes: 4 servings
Ingredients:
1.5 cup Sweet Corn
1 Liter milk
1 tsp ghee
3/4 cup sugar
1 pinch saffron
1/4 tsp cardamom powder
4-5 almonds, 4-5 pistachios (soaked in water for 4 hours)
Method:
1) Peel and sliver the soaked almonds and pistachio. Pressure cook sweet corn. Keep few karnels aside and make a fine paste of the remaining sweet corns.
2) Heat ghee into a kadai. Add the paste and saute for 5 minutes.
3) Boil milk into a pot. Stir when you see malai on the surface. Simmer and reduce the milk to 1/2 litre.
4) Add corn paste, whole sweet corns, saffron, cardamom, slivered almonds-pistachio and sugar. Boil for another 5 to 7 minutes.
5) Let the rabdi come to room temperature. Put it in the fridge. Serve chilled.
