Veg Hundi in Marathi
Time: 25 minutes
Servings: 2 to 3
Ingredients:
2 cup boiled vegetables (I used cauliflower, peas, carrot, french beans)
150 gram paneer, medium cubes
1 medium bell pepper, deseeded and medium cubes
2 medium tomatoes, finely chopped
1/4 cup onion, finely chopped
1/4 tsp red chili powder
1 cup brown gravy (click for the recipe)
3 tbsp cashew paste
2 tbsp ginger garlic, finely chopped (1.5 tbsp garlic and 1/2 tbsp ginger)
1 tsp coriander seeds
1 tsp garam masala
1/2 tsp red chili powder
2 tbsp cream
2 tsp butter
3 tsp oil
Salt to taste
Method:
1) Heat oil into a kadai. Add bell pepper and fry half-cooked. Remove with a slotted spoon.
2) In the remaining oil fry coriander seeds. Add chopped ginger and garlic. Saute for 10-15 seconds. Then introduce onion. Saute until brownish (do not burn).
3) Once onion is done, add tomatoes and fry until mushy.
4) Now add boiled vegetables, fried bell pepper, brown gravy, cashew paste, cream, butter, salt, red chili powder, garam masala some water.
Simmer for few minutes. Garnish with cilantro and some cream.
Serve hot.
Tips:
1) Add 1/2 tsp kashmiri red chili powder along with normal chili powder for bright red color.
