साहित्य:

दिड कप बेसन
साधारण पाऊण कप तूप (वितळवलेले)
३/४ कप पिठी साखर (किंवा गरजेनुसार)
१/२ टिस्पून वेलचीपूड
३ टेस्पून दूध
बेदाणे किंवा सुकामेव्याचे तुकडे आवडीनुसार

१) बेसन तूपामध्ये मध्यम आचेवर खमंग भाजून घ्यावे (साधारण ३५ ते ४० मिनीटे). भाजताना सारखे ढवळत राहावे. तूपात बेसन घातल्यावर आधी घट्ट होईल आणि साधारण ५ ते ७ मिनीटांत पातळ व्हायला लागेल. पातळ झाले तरी काळजी करू नये.
२) दुध न घालता:
बेसन छान बदामी रंगावर भाजले गेले कि गॅस बंद करावा. बेसन पूर्ण गार होवू द्यावे. साधारण २ तास तरी साखर घालू नये. नंतर त्यात आवडीप्रमाणे सुकामेवा, वेलचीपूड आणि गरजेनुसार साखर घालावी. निट मिक्स करून लाडू वळावेत. कधी कधी लाडूचे पिठ पातळ झाल्यासारखे वाटते आणि लाडू बसतात. पण काही तासांनी लाडू वळले कि छान होतात.

तरीही बेसन गरम असतानाच थोडे दुध घातले तर शक्यतो लाडू चुकत नाहीत. त्याची कृती पुढीलप्रमाणे.
२) दुध घालून:
बेसन व्यवस्थित भाजले गेले आणि खमंग वास आला कि गॅस बंद करावा आणि दुधाचा हबका मारावा. यामुळे बेसन चांगले फुलेल (आधी फसफसेल) आणि घट्टसर होईल. हे बेसन लगेच दुसर्‍या भांड्यात काढून ठेवावे. साधारण २० मिनीटांनी यात सुका मेवा, वेलचीपूड आणि साखर घालून हलके मळून ठेवून द्यावे. गार झाले कि लाडू वळावेत.

टिप:
१) हे लाडू १५ ते २० दिवस सहज टिकतात. फक्त बेसन गरम असतानाच दुधाचा हबका मारावा.

    First of all wish you happy diwali,

    If your laddus are properly moist, then cashew nuts should stick on it. But sometimes if Ghee is less and weather is dry, sometimes it happens. Another reason is if you try to stick chashewnuts after some hours of forming laddus, nuts won't stick because laddus are perfectly forms and the outer layer becomes firm.
    If this is the reason, next time when you make laddus, stick cashew nuts at that time only.

    Done with the dauting task of making ladoos :) Taste chhan zali ahe.. laptop kitchen madhe theun ek ek step follow keli ani tyamule there was no disappointment! fakta mazhe ladu jara jasta moist watat ahet.Mi thoda jasti pramanat kele so proportion compare kartana mazhyakdun tup jasta padlyasarkha wattay, tyamulehi jasta mausar hou shaktat na? Pan of course Jasta tupamule jasta tastepan ali pan shape thodaa flat alay.. pan tuzhya ladunsarkhech disat ahet atta.. I hope thode walale ki ajun firm hoteel.. mi 2 cup besansathi 0.8 cup tup waparle.What do you think? Tupamulech maupana yetoy na? dabyat bharaychi bhiti wattey! :P

    तुला आणि परीवारास दिपावलीच्या हार्दिक शुभेच्छा..
    अगं तु कुठल्या पद्धतीने केलेस, म्हणजे दुध घालून कि दुध न घालता. शक्यतो दुध घालून लाडू बिघडत नाहीत.
    मी दुध न वापरता लाडू केले तेव्हासुद्धा थोडे पातळसरच झाले पण काही तासांनी निट बांधले गेले. आणि लाडू वळताना खुप जास्तवेळ हाताळू नये हाताच्या उष्णतेने तूप वितळायला लागते आणि लाडू निट वळता येत नाही. बाकी मला तरी तू घेतलेले प्रमाण बरोबर वाट्टेय आणि जास्त तूपाचे कसले भारी लागतात ना लाडू !!

    Doodh ghalunach kele. Bighadle nahiyet pan thode mausar ani thodesse flat (not perfect round) zalet. Pan of course navra fida zalay ladunwar.. topan mhanala tupamule jasta chhan lagat ahet.. hehhe.. so I am happy too :)

    Tip.: Besanache pith jast patal zhalyavar asa vatla ki ladoo valnar nahi. Char tasane baghitla tar pith ghatta zhalela, thyachya nantar zheva ladoo valle tar it was vry vry tasty and ladoo's were awesum. Thanks once again.

    This is my third comment on your blog within a few hours. With the laptop open on the dining table we are following your recipes ditto...well I did a little experiment on rava-besan laddus and they turned out beautiful. I added milk just like besan laddus when the mixture was very hot and followed the rest of your recipe as you have it-bina-pakachi. The result is the rava is not very karkarit and is soft.

Can i suggest some thing?You can significantly reduce preparation time by dry roastng the besan in microwave.I do it that way.Later you may roast it in ghee for 1-2 min.Your ladoos are ready in 10 minutes. No one can make out the difference.They taste awsome.Who has time to roast it for 45 min or so?

    Sufficient amount of ghee makes besan laddu taste better. This amount of ghee works for me :). However, ghee can be reduced according to your preference.

    I made besan laadu wth ur recipe. I used 6 cups pof besan, 1.5 cup of ghee and 4 cups of sugar and 1 cup of milk.

    followed all the steps correctlt. pan ata maza mishran bhagaral zala ahe. laadu walata yet nahiye. kay karu? please respond quickly :(

    First of all thanks for your recipe!
    I followed it and used the same proportion. However my mixture of besan and gheen has become very thin. I heated it on medium flame for 45 min, still it is thin. Kay karu? Please advice.

    Tasbhar mishran tasech rahudet. Jar tarihi thodepan sukale nahi tar mag thode besan kordech bhajun chamcha-chamcha add kar. Mix karun paha. Hopefully ladu valata ale pahijet.

    1. For 1.5 KG besan you will need minimum 2.5 to 3 cups of melted ghee. You may need some more. Add more if you feel that besan is dry.
