Rice wada in Marathi
Time: 15-20 minutes
Makes: 12 to 15 medium vada
Ingredients:
1 cup cooked rice (leftover or fresh both will work fine)
Jowar flour (as much as required)
1 tbsp rice flour
1/2 tsp cumin seeds, 1/4 tsp turmeric powder
2 tsp green chili paste
1 tsp coriander powder
Fistful cilantro, finely chopped
Salt to taste
Oil for frying
Method:
1) If you are using a day old rice, then the grains might be little hard. To soften them, sprinkle a couple of spoons of water, cover and steam cook in microwave.
2) Add cumin, turmeric, chili, coriander powder, cilantro and salt to taste to the rice. Mix well. Add rice flour and mix well.
3) Now start adding jowar flour a spoonful at a time. Knead and add more till get doughy consistency. (You may need approx 1/2 to 3/4 cup of flour). Add some oil and knead again.
4) Divide into 1 inch equal portions. Flatten them using little oil. Poke in the center to make a hole. Deep fry into heated oil over medium heat.
5) Remove from the oil when vada becomes golden brown. Put them on tissue paper to remove excess oil. Serve hot along with tomato ketchup or coconut chutney.
Tips:
1) It is a good alternative to use leftover rice instead of making fried yellow rice.
2) You may use other flours like wheat flour, Bajra flour according to your preference and availability.
3) Eat these vadas when they are hot. Once they become cold, they will loose the crisp.
4) To make this recipe kid friendly, skip the green chili. And use fresh cooked rice.

DeleteInstead of jowar flour, you may add wheat + besan flour. OR you may try mixing different flours available (like mung dal flour, bajra flour etc). One of the reader gave a feedback that she tried this recipe using Thalipith Bhajani (Click here for the recipe) and it turned good !!
DeleteI have lot of murmura can I soak make a paste and add to it '... will it help to be crispy ...don't know what to do with that murmura ....it is not crispy also

DeleteIf murmura is not crispy then dry roast the into a kadai. OR microwave for a minute or two. This will help to remove the moisture. The murmura will become crispy again.
