Spinach Shankarpali in Marathi
Time: 30 minutes
Makes: approx 4 servings
Ingredients:
3/4 cup Maida
3 tbsp palak puree (Put the palak into boiling water for 2-3 minutes, then drain the water and puree.)
1 tsp green chili paste
2 tbsp hot oil
1 tsp cumin seeds, coarsely crushed
1/2 tsp black pepper powder, coarse
1/2 tsp carom seeds, coarsely crushed
Salt to taste
Oil to deep fry shankarpali
Method:
1) Take maida into a mixing bowl. Pour very hot oil over maida. Add cumin seeds, black pepper, carom seeds, chili paste, salt and palak puree. Mix well. Add little water if required. Knead to a stiff dough. Cover and let the dough rest for 15 minutes.
2) Heat oil into a kadai over medium heat. Divide the dough into 2 to 3 portions. Roll one portion and make a circle. It shouldn't be too thick or too thin. By using a shankarpali cutter, cut and make diamond shaped shankarpali.
3) Keep the flame over medium and low. Add shankarpali and keep moving with a slotted spoon. Do not add too many shankarpali at once. Fry them in batches.Fry till they are crispy. Remove from the oil with the help of slotted spoon. Likewise fry the remaining shankarpali.
Tips:
1) The above quantity is enough for 4 to 5 people. If you want to store them, double or triple the amount of ingredients.
2) Do not add chili paste if you are making it for kids.
