Tomato Bhurta in Marathi
Time: 25 to 30 minutes
Makes: 3 servings
Ingredients:
4 big tomatoes
2 medium onions
5 to 6 medium garlic cloves
1 spring of curry leaves
3 tsp oil, 2 pinches each of mustard seeds, cumin seeds, hing, and turmeric powder
2 green or red chillies
Salt to taste
Method:
1) Preheat oven at 500 F for 5 minutes.
2) Take a baking sheet. Apply 1 tsp oil on it. Cut each tomato into 4 pieces. Place them on the baking pan. Chop onion and make medium chunks. Separate each petal. Crush garlic slightly. Place garlic and onion on the baking sheet too.
3) Bake until tomato's skin wrinkles and onion becomes slightly golden. It will take about 4 to 5 minutes. (Time may vary so keep an eye)
4) Take the pan out. Let the tomatoes and onion cool down. Then remove the skin of tomatoes and only use flesh. Chop it roughly.
5) Heat oil into a kadai. Add mustard seeds, cumin seeds, hing, turmeric, chillies and curry leaves. saute for few seconds. Add garlic and onion. Saute for 30 seconds.
6) Add chopped tomtatoes and salt. Saute for few minutes over medium heat.
Serve hot with Roti.
Tips:
1) If you dont have oven, roast tomatoes into a fry pan. Apply little oil to the pan before placing tomatoes. Keep the skin-side down. No need to roast the onion and garlic. Stir fry them when you prepare tadka.
2) Tomatoes should be red and juicy.
3) You can add a pinch of sugar to give a hint of sweetness.
