Corn Usal in Marathi
Time: 20 minutes
Serves: 2 persons
Ingredients:
1 cup white corn kernels
For tempering: 2 tsp oil, 2 pinches mustard seeds, 1 pinch hing, 1/4 tsp turmeric powder, 1/2 tsp red chili powder
2 tbsp fresh coconut, scraped
2 small pieces of kokum
1 tbsp jaggery or sugar
2 tbsp cilantro
Salt to taste
Method:
1) Pressure cook corn upto 2 whistles. Add 1/4 tsp salt while pressure-cooking.
2) Heat oil in a kadai. Add mustard seeds, hing, turmeric powder, red chili powder and coconut. Saute for few seconds.
3) Add cooked corns, little water and kokum. Check the salt and add little if required. Cover and cook for few minutes over medium heat.
4) Add jaggery and simmer for couple of minutes.
Tips:
1) White corns are not sweet in taste like sweet corns. Hence little jaggery or sugar is required. If corns are tender, then pressure cook upto 1 whistle.
