Spring Onion Chutney in Marathi
Time: 5 minutes
Makes: 3/4 cup chutney
Ingredients:
3/4 cup Green Part of Spring Onion, finely chopped
1/2 cup Malaiwala yogurt (see Tip 1 for the alternative)
2 green chilies
For tempering: 1 tsp ghee, 1/2 tsp urad dal, 2 red chilies, 2 pinches hing, 5-6 curry leaves
Salt to taste
Method:
1) Grind chopped spring onion, yogurt, salt and green chilies together. Transfer it to a bowl.
2) Heat a tadka pan. Add ghee and let it melt. Add urad dal and wait till color changes to light pink Then add red chilies, hing and curry leaves. Pour this tempering onto the chutney.
Mix and serve with dosa or any pakoda.
Tips:
1) If you don't have malaiwala yogurt; then use normal yogurt and add 2 to 3 tbsp malai. When you use normal yogurt, hang it for 1 hour. No need to drain all the water. If you use normal yogurt directly, then the consistency will be slightly runny.
2) Increase or decrease the amount of chillies to adjust the spiciness.
3) Add few drops of lemon juice, if the yogurt is not sour enough.

Love this chutney indeed cause sometimes I find it difficult to finish the greens of spring onions at home...chutney will be sure, tasty rescue!
