Aloo Matar in Marathi

Time: 20 minutes
Serves: 3 to 4

Ingredients:
1.5 cups fresh green peas
3 big potatoes, peeled and cut into medium cubes
2 medium onions, finely chopped
1 tsp coriander powder
1/4 tsp cumin powder
For tempering: 2 tbsp oil, 1/4 tsp cumin seeds, 2 pinches hing, 2 pinches turmeric powder, 1/2 tsp red chili powder
1/2 tsp grated ginger
1/4 tsp amchoor powder
1/2 tsp garam masala (optional)
1/2 cup yogurt, whisked
Salt to taste

Method:

1) Heat oil into a wok. Add cumin seeds, hing, turmeric powder and red chili powder. Add onion and 1/2 tsp salt. Flame should be on medium. Saute onion until color changes to golden brown.
2) Add peas and potatoes. Cover the wok with a steel plate filled with some water. Once peas and potatoes are well cooked, add ginger, amchoor, coriander-cumin powder
3) Turn heat to low. Add yogurt and stir well. Add some water to adjust the consistency. Check the taste and add salt and red chili powder. Also add garam masala. Cover and cook for 2 minutes.
Serve hot with chapati or any other indian bread.
