Suran sabzi in Marathi
Time: 15-20 minutes
Servings: 3
Ingredients:
1/4 kg Elephant Foot Yam (suran)
For tempering: 1 tsp ghee, 1/4 tsp cumin seeds,
4-5 curry leaves (optional)
2 green chilies, slit
1 tbsp roasted peanuts powder (coarse)
1 tbsp fresh coconut, scraped
Salt to taste
1/2 cup buttermilk
Method:
1) Peel the Yam. Cut the flesh into medium cubes. Pressure cook upto 2-3 whistles. (add few pieces of kokum or some tamarind water while pressure cooking) (imp tip 1)
2) Heat ghee into a pan. Add cumin seeds and let it sizzle. Then add chilies and curry leaves. Saute for a few seconds. Turn heat to low. Add cooked yam and add buttermilk. Add salt, peanut powder and coconut. Mix well. Cover the pan and cook for 3-4 minutes.
3) Check the taste and add little sugar if you like slight sweet flavor.
Serve hot with chapati
Tip:
1) Cutting raw yam with bare hands may irritate the skin. Also, you tounge and throat may feel itchy after eating cooked yam too. Hence apply some oil while cleaning the yam. When you pressure cook it add some tamarind or kokum along with yam pieces. The sourness will help to remove the element which causes itching.
