Lung Fung Soup in Marathi

Time: 20 minutes
Servings 4

6 cups vegetable stock
4 baby corns, thick slices
1 medium carrot, thick slices
1 small bell pepper, chopped (1 cm cubes)
6 mushrooms, sliced
1/4 cup cabbage, chopped (1 cm pieces)
1 tsp oil
4 to 5 garlic cloves, finely chopped
2 tsp lemon juice
Salt to taste
3 pinches pepper powder
2 tbsp green part of spring onion

1) Heat oil into a pan. Add garlic cloves and saute over medium heat. Add carrot and baby corn pieces. Saute for a minute. Then add bell pepper, mushrooms and salt. Saute for 30 to 40 seconds.
2) Add vegetable stock and let it boil for 3-4 minutes. At the end, add cabbage. Add pepper powder, salt (if required) and lemon juice. Mix and serve. Garnish with green onion.

1) You will find a thin film of Oil on the surface. If you want to avoid it, don't use oil. Just boil the vegetables in vegetable stock.
2) If you don't have vegetable stock, you can make this soup using water. And use 1/2 cube of Maggi Magic Masala. It gives nice flavor.

3) You can add beaten eggs in this soup. When the soup is done, add beaten eggs and boil the soup for 1 or 2 minutes. egg particles will float on the surface, at that time turn off the heat. and serve the soup

    We don't want to cook cabbage completely. I like it crunchy.
    If you want you may simmer the soup for 30 seconds more if you like.
