Vegetable Manchurian in Marathi 

Time: Preparation: 25 minutes | Cooking Time: 15 to 20 minutes 
Serves: 3  persons

1 cup grated cabbage
1 medium carrot, grated
5-6 French beans, finely chopped
2 Spring Onions, finely chopped
1/2 cup Bell pepper, finely chopped
3/4 cup Corn flour (corn starch)
1/4 cup All purpose flour
1 Green Chili, finely chopped
Salt to taste
Oil for deep-frying
::::Manchurian Sauce::::
2 Green Chilies, finely chopped
2 tsp ginger, finely chopped
1 tbsp garlic, finely chopped
1 tbsp Corn Starch
2 tsp Oil
1 tbsp Soya Sauce
1 tsp Vinegar
1/2 tsp Sugar
1 to 1.5 cup Vegetable Stock or water

Salt to taste

Method:
1) To make manchurian balls, mix all the grated and chopped vegetables, except spring onion. Put them in a microwave safe bowl, add salt, cover and steam cook for 2 minutes. Once vegetables cool down, squeeze and reserve the water (Use it to make gravy) Now mix squeezed vegetables, all purpose flour, corn flour, chopped spring onion and little salt. Divide the dough and make 1 inch balls.
2) Heat oil into a kadai. Deep fry manchurian balls over medium heat.
3) Heat 2 tsp oil into a kadai. Add chopped green chili, garlic, ginger and saute for 25 seconds. Lower the heat. Add sugar and soy sauce. Immediately add vegetable stock. Put the heat on high. Bring vegetable stock to a rolling boil. Mix corn starch in 1/4 cup water. Remove all lumps. Add it to boiling stock. Stir well. Add more corn starch if you want more thickness.
4) Add reserved water. Check the taste and add salt if require. Also, add vinegar. Mix well. Add 2 tbsp sliced bell pepper and thinly sliced cabbage. Add manchurian balls, boil for one minute.
Garnish with green part of spring onion. Serve hot.
