Sweet Potato Sabzi in Marathi
Time: 15 minutes
Servings: 2 to 3
Ingredients:
2 medium Sweet potatoes
1 tbsp ghee
1/2 tsp cumin seeds
2 to 3 tbsp roasted peanuts powder (coarse)
2 green chilies, slitted
2 tbsp fresh coconut, scraped
Salt and sugar to taste
Method:
1) Wash and trim the ends of sweet potatoes. Cut and make medium pieces.
2) Heat a kadai. Add ghee. When ghee is hot, add cumin seeds and green chilies. Saute for 10 seconds and add sweet potato pieces. Add salt and mix well. Place a water filled thali on top. Cover and cook over low heat. Give a quick stir occasionally to avoid burning.
3) Once sweet potatoes are almost done, add roasted peanuts and coconut. Mix well. Remove the lid and let the sweet potatoes cook over medium heat.
Tips:
1) If you feel that the peels are tough then you may remove them before making sabzi.
