Raw Banana Frankie
Time: 25 to 30 minutes
Makes: 6 medium frankies
Ingredients:
Patties
5 medium plantains (1 cup mashed pulp)
1 tsp green chili paste
1/4 cup cilantro, finely chopped
1 tsp coriander powder
1/2 tsp cumin powder
2 tbsp thick poha (grind to make a coarse powder)
2 pinches amchoor powder
Salt to taste
Oil for frying
For Wraps:
1/2 cup wheat flour
1/2 cup Maida
Salt to taste
2 tsp oil
Other Ingredients:
Chat masala
Tomato Ketchup
Green chutney
Salt
Sliced cabbage
Chopped Tomato
Butter
Method:
1) Cut the plantains into 2 inch pieces. Give a slit on one side of the peel. Immerse all the pieces into water just for few seconds. Then drain the water. Rub little salt all over. Pressure cook upto 4 whistles.
2) Meanwhile, mix wheat flour, maida and little salt. Add 2 tsp oil and sufficient water. Knead to a pliable dough. Rest it for 15 minutes.
3) Divide the dough into 6 equal portions. Roll and roast on tawa. Apply little oil. Put them into a covered chapati container.
4) Peel the plantains. Add cumin-coriander powder, salt, chili paste, amchoor and cilantro to plantain flesh. Crumble well. Add ground poha and mix well. Divide into 6 equal portions and shape them like a flat hot dog roll.
5) Heat oil into a kadai. Deep fry patties over medium heat till golden in color.
6) Heat little butter onto a tawa. Spread it well. Place a prepared wrap. Apply some tomato ketchup (and green chutney). Place one fried pattie in the center. Top the pattie with some sliced cabbage and chopped tomato. Sprinkle some chaat masala and little salt.
Wrap the pattie with the roti. Serve hot with tomato ketchup and green chutney.
Tip:
1) You may add bread crumbs instead of ground poha
