Amla Candy in Marathi
Time: 7 to 8 days
Ingredients:
20 Amla
Sugar
1 tsp juice of ginger OR grated ginger
Method:
1) Pressure cook Amla.
2) Once pressure releases, take the amlas out. Drain and reserve the water. Separate the petals. Remove the pit. Gently apply ginger juice onto amla petals.
3) For 1 part Amla petals use 1.5 part sugar (For 1 cup amla pieces use 1.5 cups sugar. For 2 cups amla pieces, use 3 cups sugar)
4) Take sugar into a pan. Add water just enough to cover the sugar. Boil, once sugar dissolves, turn the heat to low. Make soft ball consistency syrup.
5) Once syrup is done, turn off the heat. Add cooked petals and gently mix. Let it soak for atleast 8 to 10 hours.
6) Then remove the petals gently with a spoon. Put them onto a plastic paper separately. Dry them for 7 to 8 days under sunlight.
7) If the sunlight is not strong then it may take more than 8 days to dry the amla. Amla petals should get dried nicely.
8) Transfer dried amla candy into a plastic container.
Tips:
1) If the petals are not well dried, they will not last longer.
2) Dust dried candies into coarsely ground sugar.
3) Make Amla sharbat of remaining sugar syrup.
