Methi Corn Paneer in Marathi
Time: Prep : 30 minutes | Cooking: 20 Minutes
Servings: 3
Ingredients:
1.5 cup packed Methi leaves
3/4 cup Sweet corn, boiled
100 gram paneer, 1 inch cubes
1/2 cup chopped onion
1 big tomato, pureed
2 tsp garlic paste
1 tsp ginger paste
3/4 cup brown gravy
2 tbsp cashew paste
1.5 tsp coriander powder
1/2 tsp cumin powder
1 tsp red chili powder
1 tsp garam masala
2 tbsp ghee
2 tbsp cream
Salt to taste
Method:
1) Wash and chop methi leaves. Put them in a microwave-safe bowl. Add 2-3 tbsp water and 1/2 tsp salt. Cover and microwave for 1 minute twice. Let it cool down. Squeeze out all the water.
2) Heat ghee into a kadai. Add ginger garlic paste. Saute over medium heat. Add onion and saute until reddish. Add tomato puree and cook over medium-high heat. Stir continuously.
3) Add chopped methi leaves and sweet corns. Cover and cook for few minutes.
4) Once methi is done add brown gravy, cashew paste and little salt. Simmer over medium heat. Cashew paste tends to stick at the bottom of the pan. So keep stirring occasionally from the bottom.
5) After few minutes add some water, chili powder, coriander-cumin powder and garam masala. Stir and add paneer cubes. Cook for a few minutes. In the end add cream and serve.
Serve hot with chapati.
