Finger Chips Sabzi in Marathi
Time: 25 minutes
Serves : 4
Ingredients:
6 medium potatoes
Oil to deep fry
1 tsp ghee
for Tempering: 1/4 tsp cumin seeds, 1/4 tsp hing, 1/4 tsp turmeric powder
2-3 green chilies, slit into two pieces
8-10 curry leaves
1/4 cup scraped coconut
12-15 cashew nuts
Salt to taste
Method:
1) Peel the potatoes. Cut potatoes into shape like finger chips. Heat oil and deep fry finger chips medium heat until golden in color. Place fried chips onto a paper. Sprinkle some salt while hot. mix gently.
2) Take another kadai. Heat ghee over low heat. Add cashew nuts and fry until golden. Remove them with slotted spoon and put into a plate. Prepare tempering using the same ghee. Add cumin seeds, wait till they splutter. Add hing, turmeric, and green chilies. Saute for 10-15 seconds. Then add fried chips, little salt (if required), scraped coconut and fried cashews. Mix well and saute for 2 minutes.
Garnish with cilantro. Serve hot.
