१ कप तांदूळ
१ कप किसलेला गूळ
१ चमचा तूप
खसखस
तळण्यासाठी तूप / तेल

कृती:
१) तांदूळ ३ दिवस पाण्यात भिजवावेत. प्रत्येक दिवशी पाणी बदलावे.
२) चौथ्या दिवशी चाळणीत पाघळत ठेवावे. पंच्यावर घालून कोरडे करून घ्यावेत. मिक्सरमध्ये एकदम बारीक करून घ्यावे नंतर बारीक चाळणीमधून चाळून घ्यावे.
३) किसलेला गूळ आणि १ चमचा तूप चाळलेल्या बारीक तांदूळात घालून मळावे. घट्ट मळलेला गोळा ५-६ दिवस डब्यात भरून ठेवावा. स्टिलचा डबा वापरू नये शक्यतो प्लास्टिकचा डबा वापरावा किंवा प्लास्टिक पिशवीत भरून प्लास्टिकच्या हवाबंद डब्यात ठेवावे.
४) ५-६ दिवसांनी हे पिठ बाहेर काढावे. तळण्यासाठी मध्यम आचेवर तेल / तूप गरम करावे. २-३ सुपारीएवढे गोळे करावे. पुरीसारखे लाटावे. लाटताना खसखशीवर लाटावी. हि पुरी तळताना खसखस असलेला भाग वरती ठेवावा आणि तळताना पुरीची बाजू पलटू नये, नाहीतर खसखस जळू शकते.
५) पुरी तेलात टाकल्यावर फुलते व थोडी पसरट होते त्यामुळे झारा आणि एक स्टीलचा चमचा तेलातील पुरीच्या कडेने धरावा म्हणजे पुरी तुटणार नाही व गोल राहिल.
६) अनारसे तळताना ब‍र्‍याचदा तो फसफसतो (हसतो). तेव्हा पिठाचा गोळा तसाच ठेवून द्यावा, नंतर वापरावा कारण हे पिठ ५-६ महिने सहज टिकते.
७) अनारसे मध्यम आचेवर सोनेरी रंगावर तळून काढावेत. चाळणीत उभे करून तेल निथळून जाऊ द्यावे.

    anarshyasathi Tandul ekdum barik karava lagto ani nit chalun ghyava lagto.
    jar pith aajach bhijavle asel tar thode dry hote..pan haluhalu tupacha haat lavun tyacha gola karun havaband dabyat bharun thevava lagel atleast 3 divas..aani gola kartana thoda tupacha haat lav mhanje milun yeil..
    3-4 divasanni pith naramsar hoil.. (Daba fridge madhye thevu naye baherach thevava)

  20. hi, this recipe is too much good...I had tried it first time and the anarase r really very good and tasty,....I think u should decrease small amt of jaggery as if it is more than rice flour the anarse mixture will be not be thick enough to roll.

  25. if anarsa pith is too dry , you can just mix with small amount of mashed ripe Banana and then try it. it will become soft dough.and easy to roll with rolling pin or with hand. You can give a shape by applying little ghee on our palm and then fry it.
    and if Anarsa pith is too soft, you can add some Rice flour in it no problem.

    I followed the recipe but I am not able to make dough. When I mixed jaggery and ghee, mixture was still powder like. If I add more ghee I might ruin the recipe. What liquid can I add to make dough? Please help diwali is just 5 days away.

  33. There are two thing you may try

    1) Banana - Take a small quantity of the mixture. Add mashed banana and knead. This method is helpful, but anarase get a slight flavor of banana.

    2) Milk - Take a small amount of mixture into a bowl. Wet your hand with some milk. Knead the dough till you get the desired consistency. Only problem with the milk is anarse might not become light. They also won't get a lot of holes (jaali).

    Try it on a small quantity. I have never tried them but have heard that they work.

    jar varil praman gheun pith banavle asashil tar ajun gool ghalaychi avashyakata nahi. Jast gool ghatla ki talatana hamkhas anarse hasnar.
    Yavar ata upay mhanje bhijavlele thode pith bajula kadhun tyat tandulache pith mix karun purya karavyat.
    anarashancha haach problem ahe, jamle tar tyasarkha dusra padarth nahi. pan chukale tar tya pithat faar kahi changes karta yet nahit :)

      mala vattey ki tuze praman chukale ahe. Me 1 cup tandulala 1 cup gul ghyayla sangitla ahe. Tu kilo madhye praman ghetleys tyamule bahuda he chukale asave.

    मी अनारसे थोड़े तळले। सुरुवातीला ज़रा अवघड गेल. मग मी पूरी सारखा न करता थोड़े जाडसर करून पाहिले आणि मंद गैस वर केले।
    परंतू एक शंका आहे, अनारसा पलटायचा नसल्याने खलील बाजू डार्क होत जाते , आणि वरील बाजूला मात्र लवकर सोनेरी रंग येत नाही। वरची बाजू होण्याची वाट पहिली तर खालची बाजू करपते। प्लीज यावर उपाय सांगा। .

  64. टीप : पीठ मळताना गुळ बेतानेच घ्यावा , सर्व पीठ एकत्र मळू नये , थोडे थोडे घेऊन मळावे. उष्णतेने ( आपल्या हाताच्या + गुळाच्या + केळ्यामध्ये पण असिड असते , ) त्यामुळे पीठ पटकन नरम होते. म्हणून थोडे थोडे मळावे. जास्त गुळ झाला कि अनारसे हमखास हसतात.
    स्पेशल टीप: कि थंड प्रकृतीच्या व्यक्तीने पीठ मळले तर पीठ आणि अनारसे फसत नाही १००% ....देविका
