Paneer Pahadi in Marathi
Time: 20 to 25 minutes (Excluding marination time)
Serves: 2 persons
Ingredients:
200 grams paneer, cut into bite-size cubes
1 medium bell pepper, cut into medium cubes
1 small onion, cut into medium cubes, (separate each petal)
::::Mint Chutney::::
1/4 cup Mint leaves, packed
2 tbsp chopped cilantro, packed
1 tsp corn flour
5 green chilies
1 tsp coriander powder
1/2 tsp cumin powder
4 to 5 big garlic cloves
2 tbsp sour yogurt
Salt to taste
::::Other ingredients:::
2 tsp oil
Little salt to sprinkle
1 tsp chat masala + 1/2 tsp tandoori masala
2 to 3 pinches black pepper powder
2 to 3 pinches Red chili powder
Method:
1) Grind mint leaves, cilantro, chilies, coriander-cumin powder, garlic, yogurt and salt together. Make a thick paste. Mix in corn flour.
2) Marinate paneer, bell pepper and onion in the mint paste. If you have steel skewers, arrange them onit. Refrigerate for an hour.
3) Preheat tandoor for 3-4 minutes. Spray little oil on paneer and vegetables. Grill until edges of paneer become brownish.
Sprinkle some chat masala, tandoor masala, black pepper, red chili powder and little salt over pahadi paneer.
This appetizer does not need any chutney or sauce. It tastes amazing itself. Thin juliannes of onion mixed with lemon juice and salt can be a good accompaniment.
Tips:
1) Paneer can be grilled in microwave-oven or OTG. The easiest way is the stove top method. Turn on the gas. Keep the flame over medium. Hold the skewer a few inches above the flame. Keep turning the skewer to roast paneer and vegetables evenly.
2) Its a make-a-head recipe. When you have a party at home, arrange paneer and vegetables on skewers. Keep them refrigerated. Grilling will only take a few minutes.
3) If you are using wooden skewers, then soak them in cold water for half an hour.
