Spring onion Karanji in Marathi
Time: 30 to 40 minutes
Yield: 6 to 8 karanjis
Ingredients:
6 to 7 sticks of Spring onion
1 medium potato
For tempering 2 tsp oil, 1/4 tsp cumin seeds, 1/4 tsp hing
1/2 tsp chaat masala
1/2 tsp coriander powder
1/4 tsp cumin powder
1/2 tsp red chili powder
2 pinch garam masala
2 green chilies or to taste, finely chopped
salt to taste
grated cheese
Oil for frying
For cover:
3/4 cup maida
1 tbsp wheat flour
1 tsp hot oil
2 pinches salt
Method:
1) Boil and peel potato. Chop it finely.
2) Finely chopped spring onion.
3) For cover mix maida, wheat flour and salt together. Add 1 tsp hot oil. Add water and make a stiff dough.
4) Heat 2 tsp oil into a kadai. Add cumin and hing. Add green chilies and saute for few seconds. Add Spring onion and salt. Saute, cover and cook over medium heat for 3 to 4 minutes. Add potatoes and mix again.
5) Turn off the heat and add chat masala, coriander-cumin powder, red chili powder and garam masala. Mix well.
6) Divide the dough into 1 inch balls. Roll and place 1 tsp stuffing in the center alongwith little cheese. Make karanjis and deep fry into hot oil over medium heat. When golden brown in color, remove from the oil.
serve hot with tomato ketchup.
