Nutritious Manchurian in Marathi
Time: 45-50 minutes
Serves: 2
Ingredients:
::::Manchurian Balls::::
3 tbsp whole Mung
3 tbsp whole matki
2 tbsp whole masoor
8-10 garlic cloves
1 inch ginger piece
2 green chilies
1/4 cup finely chopped capsicum
3 tbsp shredded carrot
1/4 cup grated cabbage (big hole grater)
salt to taste
Oil for deep frying
::::Vegetable Bed::::
1 tbsp oil
1 small onion, finely chopped
1.5 tbsp ginger garlic, finely chopped
1 green chili, finely chopped
3/4 cup Shredded cabbage
1/4 cup carrot, julianne
1/2 cup capsicum, julianne
2 to 3 tbsp hot and sweet tomato ketchup
2 to 3 tsp soy sauce
1 tsp chili sauce
2 pinches sugar
Salt to taste
::::Other Ingredients::::
1 tsp soy sauce
2 tbsp tomato ketchup
1 tsp green chili sauce
1 tsp oil
1 tsp garlic, chopped
Salt to taste
Method:
1) Soak mung matki and masoor together for 8 to 10 hours. Drain the water and remove the hard beans if any. Tie soaked beans into a muslin cloth for sprouting. Keep the muslin bag at warm temperature for 8-10 hours.
::::Manchurian Balls::::
2) Once beans are well soaked and slightly sprouted, put them into grinder. Add salt, green chili, ginger and garlic. Grind without adding water. We need coarse mixture. Mix in carrot, capsicum and cabbage.
3) Make 1 inch diameter balls. In a microwave, steam cook for 1 or two minutes. (Steam them into batches)
4) Heat oil (Tip) for frying. Deep fry steamed balls over medium heat. Poke the fried balls with a fork.

5) Heat oil into a wok. Add chopped ginger, garlic, onion, green chili and little salt. Saute till onion is light brown. Add cabbage, carrot, capsicum, Saute over high heat for 1/2 minute. Then add tomato ketchup, soy sauce, chilli sauce, sugar and salt. Spread this vegetable mixture onto a serving plate.
6) Mix soy sauce, tomato ketchup, green chili sauce and salt. Add little water. Heat 1 tsp oil into a kadai. Add chopped garlic. Saute. Add this mixture to kadai. when the mixture is hot, add the fried balls and toss. Place them over vegetable bed.
Serve hot as an appetizer.
Tip:
1) To make it more healthy, skip frying the balls. Instead just steam them little longer. Also, while making vegetables add very less or no oil.

ReplyDeleteDip the balls into water and remove. Arrange them into a microwave safe plastic bowl. Cover with a microwave safe plastic lid (with a hole to escape the steam). Microwave for 1-2 minutes.
