Ratalyache kaap in Marathi
Time: 10 to 15 minutes
Makes: 2 to 3 servings
Ingredients:
1/4 kg Sweet Potato (aprox 4 sweet pototoes, 6'' Long, 2" diameter)
1 tbsp ghee (or more if you like)
Sugar (read step 1)
1/4 tsp cardamom powder
1/4 cup fresh scraped coconut
Dry fruits (cashew, pistachio, golden raisins)
Method:
1) Wash and pat dry sweet potatoes. Cut them into thin slices. (For 1 cup slices use 1/2 cup sugar)
2) Heat ghee into a kadai. Fry cashews, pistachio and raisins. Remove using slotted spoon. Then add sweet potato slices and cococnut. Stir nicely. Heat should be on low. Cover the pan and cook the sweet potato, stirring occasionally.
3) Once sweet potato slices are cooked, sprinkle sugar and stir well. Add cardamom powder. Mix well and let it cook over low heat for 3-4 minutes.
Serve warm.
Tip:
1) Amount of sugar can be adjusted according to your taste.
