Beetroot Dry sabzi in Marathi
Time: 15 minutes
Makes: 2 to 3 servings
Ingredients:
2 medium beet roots, boiled
1 tbsp oil, 1/4 tsp cumin seeds, 1/8 tsp hing, 1/8 tsp turmeric powder
1 tsp green chili paste
2 to 3 tbsp fresh coconut, scraped
2 tbsp peanuts powder, coarse
Salt to taste
1 tsp sugar
1 tsp lemon juice
Method:
1) Peel the boiled beetroots. Cut them into small cubes.
2) Heat oil into a pan. Add cumin seeds, hing, turmeric, and chili paste. Add chopped beetroots and salt.
3) Add coconut. Cover and cook over low heat for 5 minutes. Add peanuts powder and sugar to taste
Once the dish is ready, drizzle some lemon juice for a tangy taste.

One of my collegues used to bring this beetroot subzi in tiffin and i used to 'tut pado' on it but never had the receipe , thanks for sharing that one with us!
