Muli Paratha in Marathi
Time: 35 to 40 minutes
Makes: 5 to 6 medium parathas
Ingredients:
stuffing
1 big white raddish, grated
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp green chili paste
2 tbsp cilantro, finely chopped
1/4 tsp carom seeds (ajwain)
salt to taste
Dough
1 cup wheat flour
2 tsp oil
1 medium boiled potato
1/2 tsp cumin seeds
1/4 tsp turmeric powder
1/2 tsp salt
Other ingredients:
oil or butter for roasting parathas
Method:
1) To make a dough, mix wheat flour, boiled potato, oil, cumin seeds, turmeric powder and salt. Add some water to get the medium-stiff consistency. Rest the dough for 15 minutes.
2) While the dough is resting, prepare the stuffing. Put the grated raddish into a bowl. Add little salt and mix. Within 15 minutes, salt will bring out water from the raddish. Squeeze the water out. Put raddish into a medium bowl. Add coriander powder, cumin powder, chili paste, cilantro, carom seeds and salt to taste. Mix well.
3) Heat a tawa over medium flame. While tawa is heating, divide the dough into 5 to 6 equal portions. Also, divide the stuffing into same amount of equal portions.
4) Use little dry flour and roll a dough portion into 3 inches circle. Put the stuffing in the center. Gather all the edges and seal. Use some dry flour and roll gently to make a paratha.
5) Roast paratha on the heated tawa. Drizzle some oil to keep it moist. Roast both the sides.
Serve hot with raita, Pickle, yogurt or green chutney.
