Bhopla Bhaji in Marathi
Serves: 3 to 4 persons
Time: 15 minutes
Ingredients:
1/2 kg Pumpkin, peeled and diced
For Tempering: 1 tbsp oil, pinch of mustard seeds, 1/4 tsp cumin seeds, pinch of hing, 1/4 tsp turmeric powder, 1/2 tsp red chili powder
1/8 tsp fenugreek seeds
2 tsp goda masala
1 tbsp grated jaggery
Salt to taste
2 tbsp fresh scraped coconut
Method:
1) Heat 1 tbsp oil in a pan. Add mustard seeds, fenugreek seeds, cumin seeds, hing, turmeric, red chili powder. Add diced pumpkin. Mix well.
2) Cover the pan and cook over medium-low heat. Add salt. Stir occasionally. If the pumpkin looks little dry, sprinkle very little water and cover the pan again.
3) Once the pumpkin is almost cooked, add jaggery and goda masala. Garnish with coconut. serve with wheat chapati.
Tips:
1) This curry can be prepared in pressure pan (Pressure-cooker). Prepare tempering into pressure pan as given above. Add all other ingredients and very little water. Pressure cook upto 1 whistle and turn off the gas. Let the pressure release on its own (it will take about 8 to 10 minutes).
