Tandoori Roti in Marathi

Time: 15 minutes
8 medium rotis
Ingredients:
2.5 cups maida
1/2 tsp baking powder
1/2 tsp sugar
4 tbsp yogurt
3 tbsp ghee
1 tsp salt
1/2 cup milk
1/4 cup sesame seeds/ onion seeds

Method:
1) Dissolve sugar into milk. Take a mixing bowl and add maida, baking powder, yogurt, ghee, salt and milk. Mix and add little water (only if required) to knead a soft dough (dough should be softer than chapati dough). Knead the dough nicely. Cover for 30 to 60 minutes.
2) Divide the dough into 8 equal portions. Take 1 portion, apply some oil. Flatten it on rolling board. Spread it with hand. Sprinkle and stick some sesame seeds. Preheat tandoor and roast the roti for couple of minutes. When its cooked take it out of the tandoor and apply some ghee. Likewise roast all the rotis. Serve hot.

Tips:
1) You may use onion seeds instead of sesame seeds. Onion seeds make rotis more flavorful.
2) If you don't have tandoor, you can use tawa. Apply some water on one side of the uncooked roti. Stick that side to the heated tawa. Hold tawa upside down on direct flame, so that roti will have a tandoor effect. Once roti is cooked remove it with a tong.
3) You may try roti with only wheat flour or half wheat flour and half maida.

  1. Above is recipe for Naan and Kulcha, you can make Garlic naan or Onion Kulcha also with above dough, Rotis are always made with whole wheat flour, restaurants use ready-made flour hence their rotis are whitish where as homemade are reddish in colour but taste great.
