Corn Tikki in Marathi

Time: 40 minutes
Makes: 20 medium tikkis

Ingredients:
2 cups sweet corn kernels, boiled
3 medium potatoes, (boiled)
2 slices of bread
1 tsp ginger, grated
3 green chilies, paste
2 shallots (small onions) (optional)
1/2 tsp cumin seeds
1/4 cup cilantro, finely chopped
1.5 cup Corn flakes, crushed
1 tbsp Maida + 1/2 cup water
Salt to taste
Oil for frying.

Method:
1) Peel the potatoes and mash them well. Grind the bread slices and make crumbs.
2) Grind 1.5 cups sweet corns coarsely. Add remaining 1/2 cup sweet corns. Finely chopp shallots.
3) Mix potatoes, bread crumbs, chili paste, ginger, cumin seeds, cilantro, chopped shallots and salt to sweet corn mixture. Mix well.
4) Divide the mixture into 18-20 equal portions. Make flat n round patties.
5) Spread crushed corn flakes into a plate.
6) Stir the mixture of maida and water. Dip 3-4 patties and remove immediately (dip for only 2 seconds, just to make them wet). Put them on corn flakes. Turn the sides and make sure corn flakes are stuck well all around the patties. Likewise prepare all the patties. Do not stack the patties, keep them separate. You may arrange them on a tray. Cover and put them in the fridge for 30 to 45 minutes.
7) Take out the tray and let them sit at the room temperature for 10 minutes.
8) Heat oil and deep fry them over medium heat. When you place the patties into the oil, do not disturb them for first 20-25 seconds. When one side becomes little hard then it is okay to turn the side. Otherwise, patties may break as they are tender when uncooked.
9) Let both sides of patties become golden brown. Using a slotted spoon remove them from oil. Put them on a tissue paper to remove excess oil.
Serve them hot with tomato ketchup or Mint chutney.

Tips:
1) Use plain corn flakes (I use Kellogg original)
2) Corn flakes make patties crunchy on the outside. Instead of corn flakes, you may use roasted rava or bread crumbs (dry).
3) If you are using corn flakes then place the fried patties on paper towel before serving. Corn flakes tend to soak little oil.
4) Patties can be shallow fried. In that case, use rava or dry bread crumbs.
5) Putting the patties in the fridge sets them well. Also the coating sticks nicely.
6) If you are expecting guests next day or day after tomorrow then you can make these patties ahead of time and refrigerate. Just 15 minutes before your guests are arriving, take patties out. Fry them and enjoy with tomato ketchup or mint chutney.
