Peanuts Chikki in Marathi

Time: 10 minutes
9 small squares
Ingredients:
1/2 cup Sugar, heaped
Little less than a 1/2 cup, raw Peanuts

Method:
1) Dry roast peanuts. Roast till crunchy. Don't wait till the color turns very dark. Transfer them to a plate. Let them cool completely. Rub and remove the peels.
2) Take a thick metal baking sheet. I used chapati board (chakla in Hindi, Polpat in Marathi). Grease it with some ghee. Also grease the rolling pin. You can also use thick and flat bottomed steel container to spread the mixture. If so, grease the bottom of the container.
3) Take a shallow nonstick pan. Add sugar in it and spread it evenly. Do not add water. Start the flame over low heat. It is important that the flame is on low.
4) Eventually sugar will start melting. Stir gently with a spoon. At this point, try to keep the melting sugar in the center. Do not spread too much.
5) Once sugar is completely melted, turn the heat off. Add roasted peanuts and immediately spread on the rolling board. Spread it quickly with a rolling pin or steel container. This step should be done quickly, because sugar hardens very fast. With a pizza cutter or a sharp knife, make the marks. Within a few minutes the mixture will become hard and you will be able to break the chikki.

Tips:
1) Likewise, you can make cashew chikki also.
2) Do not use aluminum foil or plastic sheet to spread the mixture.
3) Double of triple the amount of the ingredients to make chikki in a large quantity.
