खाली दिलेली कृती "Tried & Tested" आहे. सुरुवातीचे २-३ प्रयत्न फसल्यावर यशस्वी झालेला प्रयोग :-).नक्की करून बघा आणि सांगा मंचुरीयन कसे झाले ते !!

साहित्य:
:मंचुरीयन बॉलसाठी:
१ कप किसलेला कोबी
१/२ कप किसलेले गाजर
५-६ फरसबी अगदी बारीक चिरून
पाऊण कप पाती कांदयाच्या पाती बारीक चिरून
अर्धा कप बारीक चिरलेली भोपळी मिरची
३ टेस्पून कॉर्न स्टार्च
१ मिरची
मिठ
तळण्यासाठी तेल
:मंचुरीयन सॉससाठी:
२-३ हिरव्या मिरच्या
१/२ टेस्पून किसलेले आले
४-५ लसणीच्या पाकळ्या बारीक चिरून
१ टेस्पून कॉर्न स्टार्च
२ टिस्पून चमचे तेल
२ टेस्पून सोयासॉस
१ टेस्पून व्हिनेगर
१ टिस्पून साखर
१ ते दिड कप वेजिटेबल स्टॉक
मिठ

कृती:
१) सर्वात आधी मंचुरीयन बॉल्स बनवून घ्यावे. त्यासाठी सर्व चिरलेल्या भाज्या एकत्र कराव्यात. त्याला चवीप्रमाणे मिठ चोळावे, मिरची बारीक चिरून घालावी. नंतर त्यात कॉर्न स्टार्च घालावा. व्यवस्थित मिक्स करावे. मिश्रण घट्ट आणि चिकटसर झाले पाहिजे.
२) कढईत तेल गरम करावे. तेल व्यवस्थित तापले कि कालवलेल्या मिश्रणाचे सुपारीएवढे बोंडे तेलात सोडावे. चांगले ब्राऊन रंगाचे होईस्तोवर तळावे. बोंड्यांचा आकार लहानच ठेवावा नाहीतर आतून कच्चे राहण्याचा संभव असतो.
३) मंचुरीयन सॉससाठी वेजिटेबल स्टॉक वापरल्यास छान चव येते. मंचुरीयन सॉससाठी एखादे पसरट फ्राईंग पॅन वापरावे.
फ्राईंग पॅनमध्ये २ चमचे तेल गरम करावे. त्यात चिरलेली मिरची, चिरलेली लसूण-आले घालावे. १/२ मिनीट परतून थोडी साखर घालावी, मग सोयासॉस घालावा, लगेच १ कप वेजिटेबल स्टॉक घालावा. वेजिटेबल स्टॉकला उकळी येईस्तोवर १ चमचा कॉर्न स्टार्च अर्धी वाटी पाण्यात गुठळ्या न होता मिक्स करून ठेवावे. वेजिटेबल स्टॉकला उकळी आली कि कॉर्न स्टार्चचे पाणी एकदा ढवळून हळूहळू स्टॉकमध्ये घालावे. त्यामुळे मंचुरीयन सॉसला घट्टपणा येतो.
४) नंतर त्यात मीठ, व्हिनेगर घालून ढवळावे. चव बघून काही कमी असेल तर ते घालून सॉस तयार करावा. मंद आचेवर सॉसमध्ये तयार बॉल्स घालावे, निट मिक्स करावे. गार्निशिंगसाठी थोडा बारीक चिरलेला पाती कांदा, बारीक चिरलेली भोपळी मिरची आणि कोबी घालावी.

टीप:
१) मिश्रणात कॉर्न स्टार्च असल्याने तो हाताला चिकटतो, त्यासाठी तळताना बाजूला एका पसरट भांड्यात हात ओले करण्यासाठी पाणी ठेवावे, हात जरा ओले असले कि मिश्रण हाताला चिकटत नाही.
२) मंचुरीयन सॉस बनवताना दिलेल्या सिक्वेन्सप्रमाणेच गोष्टी घालाव्यात नाहीतर चव परफेक्ट होणार नाही.

  11. Hi Vaidehi,

    when i tried manchurian balls, i could not make them properly. i mean, when i was pressing that mix veg matter in hands like we press for Laduus, but all vegetables were not remaining into my hand... do not know the reason...they were getting seperated. and seems to have lot of water content. how to keep balls firm / tight..shall i add more cornfloor in it? But the sauce was tasted amazing :-)

    Me recipe thodi modify keli: Manchurian balls kartanach thode aala, lasun, aani tandalachi pithi ghatli. Tyamule Balls ekdam chhan zale.

    varil dilelya pramanat 12 te 13 lahan size che balls tayar hotil..tyanusar tu calculate kar per person kiti banavayche te.. mala vatte per person 4 pieces banavles tar 3 te 4 pat praman ghyave lagel..

    कालच ही रेसिपी करून पहिली. उत्तम झाली. चव परफेक्ट आणि सर्वांना खूपच आवडली !
    मी मंचुरियन बॉल्स करताना मिश्रणाला खूप पाणी सुटले (भाज्यांना मीठ लावल्यावर) आणि ते पिळून काढायला लागलं. भाज्या हाताने बारीक किसणी वर किसल्या होत्या. पाणी सुटल्यामुळे मिश्रण म्हणावे तसे घट्ट आणि चिकट झाले नाही. ह्यावर काही उपाय?

    vegetable stock means water flavored with variety of vegetables. To make vegetable stock, you have to boil water along with vegetables like carrot, celery, onion, garlic, coriander etc. vegetables are strained and water is reserved to use as vegetable stock.

  44. To make vegetable sock, boil 2 litres of water. Add diiferent vegetables and their stems like carrot, onion, spinach leaves and stems, cauliflower, green beans, celery etc. Then boil the vegetables for aorund 10- 15 minutes. The water will get all the flavours of the vegetables. Vegetable stock makes the manchurian gravy more flavourful.

    Mi aaj hi receipe try keli khup chaan zaali. Pan sauce la colour khup light aala hota te kasha mule ? Tujhya sauce sarkha dark colour nahi aala ....majhya kade cornstarch navhte tar mi maida vaparla tyamule rasa zaale asel ka ?

    Kalach mi Fried Rice ani Manchurians tu sangitalyapramane banvile ani khupch swadisht zale.

      Veg Manchurian che balls adhi talun thev.. sauce madhye ghalayche ingredients adhi chirun vagaire thev.. mhanje pre-preparation. Ani guest yaychya adhi..5-10 minutes sauce banavun tyat balls ghalun mand achevar ukalat thev.. karan sauce adhich karun thevla tar to gelatine sarkha hoto..

      Manchow soup suddha recipe vaach tyat step 1-2 adhi karun thev. Noodles talun thev. Fakt corn starch ghalun ukalayche baki thev.. mhanje soup ghatta nahi honar.

      chinesechya dishes adhi karun thevlya tar changalya lagat nahit karan bhajya thodya ardhya kacchya rahilya pahijet.. Pan adhich karun thevlya tar bhajya naram, mushy hotat. mag apekshit chav ani texture yet nahi. tari var dilelya tips vaparun vel vachel ani chav suddha changli yeil
